CENFROCAFE is a union of many smaller cooperatives in North Peru, based in the city of San Ignacio in the department of Cajamarca. This region, famous for being the place where the Inca Empire came to an end in the early 16th century, is one of the northernmost regions of the country. Coffee is grown on small family farms in subtropical highland valleys in between the Andes Mountains to the West and the Amazon Rainforest to the East.
The coffee grown by CENFROCAFE is largely Typica variety, fully washed and sun dried with centralized milling facilities. It is an extremely approachable yet pleasing coffee with balance and moderate acidity being core characteristics. Aromas tend to be in the roasted nut, honeyed and raisin-like dried fruit categories.
