COOPFAM is a cooperative founded by sixty-seven coffee farming families in 1991, located in the famous coffee growing region of Minas Gerais in Southern Brazil.  The cooperative produces natural processed coffee, typical of Brazilian production, which involves drying coffee seeds in their fruit before its removal.  The taste profile is distinct among coffees available from Fairtrade and Organic producers around the world in large part because of this processing method.  Better quality lots feature cashew and almond-like nutty aromas with berry nuances that make for a coffee well suited for dark roasting, yielding a more complex profile than similarly roasted washed coffees.
