This single producer lot from Justina Calix is a natural processed coffee grown on her farm, “Finca El Injerto." Coffee is fully ripened on the trees and sun dried on patios in its fruit before dry hulling. Natural processed coffee (where the seeds are left in the fruit to dry like this) is extremely rare in Central America and usually does not taste good when experimented with. This is an exception, offering explosive strawberry and blueberry aroma with good sweetness and balancing acidity.
