Your subscription can include any number or combination of 12 Oz., 2 Lb., 5 Lb., or 7 Lb. packages of coffee and can be combined with other subscription types. Our single origin coffees are roasted with beans from only one co-op or growing region which allows particular tastes and flavours from that growing region to shine through in a way that blends from different regions can't.
COMSA is an organization owned by over 500 farmers in the historic coffee producing town of Marcala, located in the La Paz department of southwestern Honduras. Coffee has been produced in the area since the early 1800’s, initially as a medicinal crop grown by large scale European landowners. Later in that century a thriving, quality-oriented industry developed thanks to the proximity of the region to ports in El Salvador and Guatemala, where demanding European traders bought coffee under relatively strict quality standards.
Early coffee cultivation in the area was done on large scale plantations, mostly owned by German immigrants and their descendents who were the most capable of investing in mills and establishing trading relationships. After the Second World War the distribution of land changed significantly, with large German landholdings claimed by the government and redistributed amongst the non-German population. Nowadays the majority of the farms in the region belong to small to mid-sized producers. The milling infrastructure was also sold off after the war - COMSA’s mill, La Victoria, is on the site of a mill founded by an early 20th century German coffee baron.
The Melghem Family are producers who live just outside of Marcala, farming on land that has been owned by their ancestors since they first emigrated from Lebanon in the late 19th century. The brothers Demetrio, Pedro, Rommel, Roland and Montgomery are among the best farmers in Marcala and all produce a portion of the coffee that goes into this blend. We discovered their coffees during a competition in Marcala in 2015 and have now purchased their coffee for two consecutive harvests.
