STEP 1

Remove portafilter from grouphead on espresso machine.

STEP 2

Flush grouphead (allow water to pass through it for 2-4 seconds, or until running clear), while using a clean cloth to clean and dry the portafilter basket.

STEP 3

Tare portafilter on scale, add coffee, we typically recommend 18g of coffee for a double shot of espresso.

STEP 4

Try to have the coffee in the portafilter be as level and evenly distributed as possible. Then use the tamper press the coffee coffee bed as levelly as possible, pressing until the bed stops compressing any further.

STEP 5

Lock portafilter back into grouphead, and turn on the grouphead.

STEP 6

Place espresso cup under grouphead, and run the grouphead for 25-30 seconds, aiming to see the first drops of coffee at 7-9 seconds, and totalling 36g of coffee in the cup (aim for double what the amount of coffee added to the portafilter).
